Peel and cut potatoes into small bite-size pieces. Fill a large pot with water and place on high heat. Add potatoes and cook until the potatoes are fork tender. Once the potatoes are fully cooked through, drain in colander and shake off any remaining water.
While potatoes are cooking, cook bacon until crispy. Cut into small pieces and set aside.
Return to pot or place in a mixing bowl. Heat butter in microwave until melted. Pour butter over the potatoes. Stir in sour cream and salt. Mix with beaters until potatoes are creamy (I use my Kitchenaid paddle attachment). Add milk if you want creamier potatoes. Taste to ensure there is enough salt. Add more salt if needed.
Top hot mashed potatoes with cheddar cheese. If the cheese isn't melting, place in the microwave or in the oven to melt it. Then, top with crispy bacon and green onions. Serve warm.
